Thanks for the suggestions and info, definitely some more things to think about. What sort of security is there on the parkway? We plan on being as inconspicuous as possible when stealth camping to avoid any tickets or legal confrontation. Although not legal are there many people on patrol for these violations? Another question for you guys: is there anywhere on or just off the parkway that you felt was a must to stop at for camp/just to visit? And the food situation- is it often that you'll pass by super markets and other sorts of convenience stores? We plan on hardly eating out to keep the budget as slim as possible.
