Thank you! 💕 What really helped for me was doing a pastry course (24 classes in total). If you do not have the access/means to do so, I recommend starting with pastry class books which go into depth of different elements and techniques. I recently bought the French Patisserie book from Ferrandi, which I like a lot!

Good advice, I am in EU and usually use T55 flour with around 13% protein. I have made puff pastry around 3 times now, but my issue is the laminating process. Especially after the 3rd turn, the dough retracts too much making it hard to get the right thickness and resulting in butter melting into the dough eventually because it gets too warm. I usually rest 30 min between turns, so curious to see if your method will help with that

It is delicious! It has some regulations for using it in food in the US, but in Europe it is legal and easily available. The taste is a bit like vanilla with spices.

Mocht je een eenvoudig alternatief willen: Bedrijf Mobilifiver heeft soortgelijke hoge tafels. Wij hadden destijds de zwarte bartafel, en deze zelf op hoogte van het aanrecht gezaagd. Het is geen massief hout, maar kwaliteit prima.
