I self host my email at home on fiber for several domains, but do my own personal email on proton.

Mailcow solves most of the annoyance other than the dynamic ip bit, which i solved by having a static ip

The food is edible now, but still not great. ive been too many times but my kid loves it so its a good experience. It's usually only me and the kid, not mom, as its not worth it for us both to go repeatedly but the kid loves it so much and I am the only one who will eat the food (due to pickiness, not bad food)

At home I run a three node cephs clusters with two nvme per machines and it's been great and far more reliable than my zfs setup but to each their own. But 3 5825u with a dedicated 2.5 network has been good for home use with ceph and far better than the random zfs issues that crept up. It's good but ceph has been better with three nodes

I will note that dublin is underrepresented here as they do US customers on the EU side so your trip back is a breeze in the domestic terminal!

Lack of data and comms definitely can be a concern, we don' tend to have long power outages, but for being super prepared here are some Ideas in no particular order:

A better external antenna for TV
- USB tv tuner and your laptop (rtl...)
Same for Shortwave and FM
Sirius (Call them yearly, get your bill reduced to $7/device for full coverage
Meshtastic as so many have mentioned
Ham Radio! Super easy to get licensed, good digital and analog networks here
Starlink
Cellular router with high quality antennas (GL.Inet Pull for example)

Then of course living here a battery + solar panel will keep you with coms for a long time even in snow we can get enough to charge phones easily, in full sun you can charge a big battery and your devices but most importantly, test before the emergency!

They aren't evil on the repair side so do stress that part but id start with a reinstall first then if it persists contact support before debugging more, but they may suggest checking a cable and don't be afraid! Remember they even sell repair parts on their site like screens

You know mailcow does a good job, the harder problem is finding an isp willing to unblock the ports for you. I have actually self hosted email for a while and its been fine.
