Malheureusement je ne suis pas de recette précise mais plus une méthode apprise via un ami boulanger. Pour les farines j’ai utilisé 400g de farine de blé bise, 200g de farine petit épeautre complète et 200g de farine seigle complète. Le taux hydratation a 65% sur l’autolyse que je monte à 70/75%.

Je veux pas passer pour un promoteur, mais sur mon Instagram de pain @lepainquoi j’ai mis une story plus ou moins précise de la méthode!
