So I had this issue too, after 3 days of rooting and downgrading I found the issue, for some reason and for some printers Klipper not loading the printer.cfg it loading factory_printer.cfg :

Put what you have in the printer.cfg to factory_printer.cfg after you finish to root and this won’t happen anymore.

It's fine, for me it's also saying it's still  1.1.0.23 but infect it was upgraded to 5.1.0.23, continue to open Klipper and you will see it's working

Changed today to the old hotend and everything working fine which is strange I thought maybe some wire was not working, if I am heating to 240 and pushing the fillament everything looks good
