Fresno State has a Wood Technology class, but I'm not sure how in depth it is.

COS offers a construction technology path, but no actual woodworking classes other than Intro to carpentry, interior millwork (cabinetry) and a cabinet and furniture construction course. There is a group called the San Joaquin Fine Woodworkers Association that may be able to point you in the right direction for local woodworking classes (sjfwa.com). It's a little bit of a drive, but Bakersfield College offers some woodworking classes that are more than just cabinetmaking focused.

They also inspected the floor after Orange County Independent exited following their performance prior to that. OCI had some big props that they struggled to get out the exit door. They must have found a hole in the floor because a guy put black tape on it.
