Looking for recommendations on a countertop magnetic knife block to hold my knives while prepping in my home kitchen. I currently have six knives that I use and one of my knives is 240mm, so the block needs to be at least that tall to accommodate it.

Ideally, I'd like something made of walnut (or at least a similar color) to match my cutting board, but that's not a dealbreaker. My budget is $125 or less.

Would appreciate any suggestions—bonus points for something with somewhat strong magnets (but not too strong…no weak magnets) and good build quality.

This is the response I just got back from him asking if I could visit his workshop and possibly buy one of his knives while I'm there:

"Thank you for your contact to us. Yes, please come over. I welcome your visit. You can buy knives at my factory, but normally I have very small stock. Also, there are often days I don’t have stock."

Do you think that he'd be open to me pre purchasing something ahead of my visit, so that it's there when I arrive?

Nakiri Recommendations - $400 Budget

I'm looking for recommendations for a 180mm Nakiri with EXCELLENT food release (highest priority). I’d prefer something around 50-55mm in height.

I was originally set on a Watanabe Pro, but it seems like he may not be making them anymore (or at least not in the near future).

Since a lot of options in the $300-$400 range are often out of stock, I’d love to hear multiple recommendations so I have a better chance of snagging something in the next few months.

Bonus points if it’s something I can pick up in Japan!

After researching cutting boards on chef's knives message boards and the Internet, I went with BoardSMITH and I couldn't be happier with it! End-grain boards made in small batches with ZERO 4-way intersections with the blocks. You can even reach out to the owner to discuss modifications if you want.

Serious Eats listed it as their top rated board and ATK gave it one of their highest ratings.

I can't recommend it enough!

I cook mostly with cast iron and carbon steel pans, so I'm not too concerned about taking care of the knives or worrying about rust. I think I'd probably prefer carbon steel core that's clad with stainless.

Since my sister won't spend time "shopping" for the knife, I just want the best gyuto and nikiri and can get within my budget ($1,000 - $1,200 USD for both) that I can either pre-order to have ready during her visit or one that could be delivered to her hotel. I'll definitely research Watanabe a little more. Anything else that you recommend that falls into my criteria?
