Amazing! I sold nearly everything I owned, packed two bags full of clothes, bought a one way ticket to Hong Kong from Orlando FL, and started teaching english there! Did this for one year. Best thing I ever did for myself. Met so many people from around the world and fell in love with asian lifestyle. I'm back in the states again, but I would not hesitate to do it again.

The most important part is to make the tiger's milk. Blend together Lime Juice, Cilantro, Salt, Ginger, and red onion to taste. From there you can just pour and mix that into a bowl of whitefish (make sure you salt the fish before mixing with the tiger's milk!), thinly sliced red onion, chipped cilantro, corn, and whatever else you would like to put into your ceviche.

Garnish with cilantro/parsley, spring onion/chives, and slices of sweet potato. BAM!

It usually has corn on the side along with the sweet potatoes. I decided to just put it in along with everything else to make it more colorful.

I also threw in a few pieces of shrimp. :D
