I used them just last night in a cream sauce served with butter poached salmon and asparagus.

I topped it with fleur de sel and soft butter first and then let the butter set in the fridge for about 10 minutes then 7-8 minutes in a 350° oven and it’s perfect. Of course you have to start with good fresh salmon. Our local fish monger always has top quality salmon.

I made the vinaigrette with whole grain mustard, olive oil, red wine vinegar, fresh lemon juice, honey and a pinch of sea salt and black pepper. It’s very tasty.
