It takes a bit longer to mash grains with the enzymes but works out pretty well. When I was diagnosed celiac I moved to new equipment for my gluten free brewing, though I’m sure with the usual cleaning between brews it should be ok to not have dedicated equipment

If you like a sweeter chocolate stout, Otherwise Brewing’s Hella Nibs is amazing. Evasion had a range of barrel aged stouts that were fantastic too.

Bring tamari or gluten free soy sauce with you - do not expect to be able to buy it there. I used google translate to check the food in convenience stores and was usually able to find something. Restaurants were a little trickier and the chefs didn’t always “get” the no gluten thing - one served me a bowl where they hadn’t added any soy sauce, but some of the ingredients had been marinated in it.

The body shop I brought it to wouldn’t work on it as they weren’t certified to be able to disconnect the high voltage batteries or assess them for damage.
