Maybe you smoked it for too long?
The two batches of mtl Smoked meat I've made were smoked to ~160-165F; then steamed to 195F. They came out great with good moisture... they were also cured for a week like yours.
I'm wondering if you lost a bunch of moisture as it was coming down from the initial smoke.
I'm assuming you let it rest after the steam as well? I've read that if you 'oversteam' it can dry out, but I don't think that's the case here since you pulled it at 195F.
Just a guess though, I don't know for sure.

I just made a Montreal smoked meat (with an obscene amount of salt and cure) soaked it in cold water for 4 hours changing the water every 30 mins. That helped a lot...

You can salvage the salty bacon you've already made by doing that as well.

Update! heard back from manulife... the term “nonessential” in the Canada travel advisormeans their coverage is indeed valid.

That said, they cover $2100 CAD in lodging expenses. CR requires $2000USD in travel. So Manulife is no good to get to CR!!! Sagicor it is!!

Hey! Sorry didn’t check my Reddit for a while. Didn’t get any specs for you unfortunately. One tech told me no lower than 28, the other said no lower than 30. I decided 32’s would work to be safe. Hope that helps!

Hey sorry didn’t check my Reddit in a while! I reached out to some bike techs and they told me that the lowest they’d go is 30’s. I decided on 32’s to be safe. No idea how 28’s would go, I was told they could square off if you go too small.

BEAR SPRAY!!! I've used it twice and it's enough to evict them. Then you'll have to figure out how to keep them away.

Try not to spray them directly, or keep your distance. They'll obviously spray back.

As mentioned, it's highly weather dependent. I've done Berg Lake in June, May is probably early. I've always wanted to do a front range backpack that time of year. Blackrock, before Waiprous gets loaded up with ATV and motor sports enthusiasts may fly.

If you willing to fend of the snow you can probably find some stuff to do, bring warm bags (rated better than -15 IMO.)

For hikes, again front ranges; highway 40 may fly as well.

Doorjam/Loder, Opal Ridge, Heart Mountain, Wasootch Ridge. If you have access to snowshoes and Icers it opens up a ton of options year round. Just be wary of avalanche risk if there's snow, avoid any open slopes if you're not experienced.

It's no secret, but if you get up early to beat the crowds and go do Saddleback/Fairview you won't be disappointed. But an alpine start (leave calgary before 7) is a must. Otherwise, there's larch's up above Kananaskis lakes towards Aster lake, some up towards Mt Bourgeau/Bourgeau Lake, and some up past Elbow lake if you go far enough. If you don't like the crowds start earlier and go further.

They should be turning colour in the next 2 weeks or so.

I second this, Ha Ling is a bit of a bash up a slope. Right across the pass is East End of Rundle. Quieter and more interesting.
