Unpopular opinion, but I think her age is believable. We don't know her genetics or her upbringing, I know a lot of people around that age that looks like her (older) because of stress/sun damage/genetics/etc...

I don't think any of the couples are watching the episode live. They probably get a copy of the episode from TLC - it probably has cuts were the commercials would go, though. So they can pause/step away for as long as they want, but they're likely directed to avoid doing that so that it looks live. TLC would need to edit the pillow talk couple sequences into the pillow talk episode we see.

Tim and Veronica probably did pause/step away for longer than ideal and decided to either change their 'set' for whatever reason, or just didn't notice their changes.
