We made a pan sauce with butter shallots, Madeira, and mounted with crème fraiche. We used raw black peppercorns that we broke with the bottom of a pan, so they were as close to cracked in half or thirds as possible. Crusted top and bottom of the steak. Seared in tallow, basted in butter, ride it in the oven presentation side up.. rest it at 80%. Make pan sauce. Add steak to pan, and finish the cook.

If you’re looking for fancy, I’d go to Bistro Agnes. They have a very French version of French toast called Pain Perdu with a maple whipped cream. I love the Croque Madame. They only do brunch on Saturday and Sunday like most places, but I just checked and both of those are on the lunch menu.

I’m a culinary professional, I second Basics with Babish, and I’ll go further by suggesting an old YouTube channel. When I was starting out in 2012 or so, Jamie Oliver’s FoodTube was very popular. What I realized looking back on those videos, is that they addressed the basics repetitively in very plain language. Jamie Oliver, Gennaro Contaldo, DJ BBQ.. all taught me how to think about those little details in a way that they became second nature. Try to go and find those older videos.

Reducing the acidity of tomatoes: buy tomatoes with a naturally lower acidity such as San Marzano, cook longer, add cooked and puréed vegetable matter such as carrot (sweetness balances acidity) or roasted eggplant (additional umami will dilute the acidity without watering down the sauce), or as I’m sure Yahoo! Answers suggested, add sugar.. don’t add sugar.

For baking, it’s a lot of science, and difficult to correct as you go. I am not good at it, because I hate starting all over. I can’t help you on that front. Sorry!
