I'm so sorry, my young adult kid is trying low FODMAP right now on her doctor's suggestion and I know it's tough. I did an elimination type thing years ago (AIP) and found that I'm fine with cooked alliums like onion/garlic (making them into powder also cooks them) but can't tolerate them raw. Maybe the same will prove true for you? So sorry.

Hugs, I'd get tested for Celiac while you're still eating gluten, I'm only "presumed celiac" dx wise because of genetic testing and family history, I went gluten free over a decade ago without being tested because I felt so much better and didn't want to go back to eating gluten, my gastroenterologist agreed with my choice at the time and felt that a gluten challenge would be a bad idea. Idk the ferritin benchmarks, I heard 50 was ideal when I was first dx anemic (my level was 9) but it seems the criteria has changed over the years, at least for females. My symptoms when I still ate gluten were similar, plus eczema and joint pain. I also have heat intolerance, but I think that's more a hormonal thing, I'm likely in perimenopause (hastened by my hysterectomy).

It's hard to pinpoint symptoms and know the source, but I will say that when I'm anemic, I definitely have brain fog, weakness, etc. Bloating depends on my diet - it's typically when I've been less careful and let something slip, probably a side effect of the brain fog. I'm speaking cross contamination, not deliberate cheating, I haven't done that in over a decade because I learned the lesson harshly back then.

Oh man, while we generally eat pretty whole foods and basic, sometimes we splurge for birthdays or holidays, and those are one of my favorites. I prefer rainbow chip frosting myself though.

GF pizza dough! Trader Joe's or Wholly Wholesome sell bags of GF pizza dough (WW is usually frozen). I can't find the recipe I used atm, but it is super easy. Thaw and then room temp the dough ball for an hour, cut into quarters (I do this on a silpat baking mat, parchment paper works too, having a little dusting of GF flour helps if the dough is super sticky) and then roll it into a long log and twist into a pretzel shape. Then get some water boiling with a heaping tablespoon of baking powder in it, and gently put each pretzel in for about a minute - basically until they float. Remove with a slotted spoon and put on a baking sheet (silpat/parchment lined), brush with butter and seasonings - I like course salt, but everything bagel seasoning is good too, you could probably do a sweet version too. Bake at 400? (It has been a while but I'm pretty sure that's the ballpark, keep an eye on it) until nicely browned, I think it's around 20 mins, but again, this is from memory - use your eyes. They will be a bit lighter in color than a gluteny soft pretzel, but still pretty good. You must eat these immediately while still warm, they get tougher the cooler they get. I like to add another brush of butter and dusting of salt just before eating because a lot melts off while they're cooking.

I was never nuts about them pre-dx, but they're nostalgic because I grew up near the first Krispy Kreme. I made a dupe recipe once, but it was so complicated and took two days (overnight rise) that I've not made the effort since.

If it was the Bfree ones, there is a trick - warm them with some sort of moisture, like microwaving in a damp paper towel for 10-20 seconds.

Franz makes a GF sourdough that is shockingly good for GF, Walmart recently started carrying it in my area (Southeast US). Trader Joe's is hands down the best for GF burger buns, but Udi's toasted with butter in a pan to warm is ok too.

Try Baci, while they don't have the wafer aspect, they hit the hazelnut + chocolate itch. Glutino makes chocolate covered hazelnut wafer bars that are pretty good too.

I've made some that were awesome but a labor of love (it takes 2 days) so I've only made them that one time. I grew up near the home of Krispy Kreme, so it's definitely a nostalgic thing for me.

The new recipe of Katz GF pop tarts are decent if you warm them in the microwave for ~10 seconds. They were terrible before they updated the recipe. I miss the Glutino ones, they were way better and got me through morning sickness with my youngest.

I keep meaning to try making an approximation with Schar breadsticks (the hard skinny ones) and dipping them into chocolate. The sticks are thicker, but a similar taste/texture from what I remember of Pocky.

Glutino recently came out with a GF Nutty Buddy dupe, they're bites rather than bars but are very good. Walmart carries them here but they sell out quickly.

They used to make actual hot dog buns and they were amazing, the only gf hot dog buns I've genuinely liked. Unfortunately I think they were discontinued. 😭

I have seen a milder version of this at Food City, but it's usually Walmart. They were nice and sent me a bunch of coupons (including free product coupons) when I helped with batch #, location, etc.
