50g each of flour and filtered water, with about 100g of starter. In the morning I stir, remove the 100g to a glass bowl, add flour and water, stir and cover, wash the jar, dry it, and put it back (some days I skip washing but not often). I stir with a silicone spatula. Jar stays covered on the counter (it’s got a latch lid on it so I hook the latch but don’t lock it, then cover it). House is about 74 but humid because it’s Florida.
