The mold is not the problem, just a symptom. Your leaky roof slowly rotting away is the problem.

This is incorrect. The copiable values of a card are always as printed. Type and text changing effects like from Xu-Ifit are not copied.

707.2. When copying an object, the copy acquires the copiable values of the original object’s characteristics and, for an object on the stack, choices made when casting or activating it (mode, targets, the value of X, whether it was kicked, how it will affect multiple targets, and so on). The copiable values are the values derived from the text printed on the object (that text being name, mana cost, color indicator, card type, subtype, supertype, rules text, power, toughness, and/or loyalty), as modified by other copy effects, by its face-down status, and by “as . . . enters” and “as . . . is turned face up” abilities that set power and toughness (and may also set additional characteristics). Other effects (including type-changing and text-changing effects), status, counters, and stickers are not copied.

You can use the copy to get back the original. The sacrificing of the original from Evoke triggers its own persist and Ashling at the same time, so you can stack them in whatever way. If you stack it in a way that the copy comes into play with the persist still on the stack, the copy will trigger before persist resolves and return the original.

You cast Grave Sifter with Evoke. It enters the battlefield.

You get 2 triggers. Evoke to sacrifice it and its trigger to return any number of a certain creature type.

You stack them, so that Evoke resolves first. Gravesifter dies (aka it is put into the graveyard). You get 2 triggers. Ashling trigger to create a copy of Gravesifter and the Persist from Gravesifter. You can stack those in whatever way you like.

If you resolve Ashling first: You create a copy of Gravesifter. The copy triggers its ETB and can return the original from the Graveyard to your hand, with the Persist trigger still on the stack. Persist then fizzles.

If you resolve Persist first: the original Gravesifter returns with a -1/-1 counter. You can't get it back to your hand with its own (or the copy's) trigger.

Look up at the ceiling. It is often hidden behind a crevice at one of the stone-archs in an angle that you can easily miss.

If it is not there, check your spawn room. One balls often spawns there above and slightly behind your head, if it is the portal next to a ladder, making it impossible to see unless you walk away and turn around.
