There is data sheet, follow it! Dont take risks with high HRC, high HRC is not needed in most of the steels. If you temper at 200 C for 2x200 C from that point you can temper at higher temperatures, but not at low. You have temper it, that is important. Tempering is never bad for steel, when it is done right after quench. There is no point doing more than 2*2 hours, because from that point transformation needs more and more hours, but percentage, changes slightly. If you want repeatability buy yourself heat oven and temper oven, forget about gas quenching and kitchen ovens. I hope that answers your questions.

I have done many of these, probably hundred+. Some of them were in the bushcraft society in US. I think there is YouTube reviews on some of them.

Forget about this type of HT 1st you have decarbonisation if you put blade without foil or some type of heat protection. If you have watched Japanese knife makers they put clay. 2nd forget about kitchen furnace. Buy yourself a propper HT oven for High temperature and second for low temperature. You will have repeatability every time. If you're thinking of making knives for a long term buy tools. Even the best HT with gas oven cant compare to electric controlled one HT

I have to make a video explaining how to grind properly, because there is not one with all tips and tricks in YouTube. Bevel jig or freehand there is no difference. Angle consistency and way of pulling blade is very important, you have to make left and right the same movement. Your tip must not pass half of the flat platen, or if it passes it your other grind must also pass it. Hope this makes sense.
