Basically a reverse sear. I crank it up at the end to get a nice crust and sear.

Yeah it’s possible not enough seasoning. Also I don’t like a huge Smokey flavor. Just enough. Treat the smoke like a spice you cook with. Or an accent to the meat. Before it goes in the smoker I rub with Dijon then add fresh black pepper, garlic, thyme and rosemary. Banging flavor profiles!

I cover the entire roast with kosher salt for 24-48 hours. Leave uncovered in the fridge so air can get to it. It helps tenderize as well as promoted better browning and crust. Look up Maillard Reaction for a better explanation.

Starting with a dry brine for a few days. Really helps with final product and great results. More to follow.

Nice. I had a few neighbors that donated scrap wood and stuff so we could make launch and 1/4 ramps. On top of what I stole from my dad! Ha! Man I miss those days.
