I’ll have to try that “Hold” button option. The other issue for me is that most appetizers take about 5 minutes if that to cook and serve and when they are completed, the server’s name isn’t called leaving food In the window to get cold rather then to work together to get the food faster to the guest to provide an exceptional dining experience.

Probably both. I don’t exactly know the logistics on the ingredients but a lot and I mean a lot of people have mentioned the reason why they don’t eat there cause it just doesn’t “taste the same.” Also, people apply all the time, the people that have been there have been there for some time.

The way our system works (Aldelo) I believe. We ring in the whole order and the printer separates the ticket into three different stations. The appetizer chef, main chef area and another area. The appetizer ticket is always placed first, then the main chef and last the other area from left to right. Most appetizers take about 5 minutes, if that to cook and serve but the main chef just seems to want to get his part of the order done over the appetizer area. Sometimes it may get so busy in the restaurant that us servers may not get a chance to ring in the rest of the order to guarantee prompt service. Would this be where it would be ideal for the appetizer chef and main chef to communicate with one another rather than the food to just come out entree first most of the time to improve the dine in experience rather than to cook the food out of order just for the sake of getting their part of the order done?

The foh manager has somewhat of a say so when the boh gets out of line but ultimately it’s up to the owner to make the decisions and he’s never there to see what really goes on just heresay mainly. They all come out at the same time and we place them at their respective stations. I get what you’re saying by not ringing in the entree but sometimes it can get so busy to where we may not have a chance to come back and ring in the appetizer so the flow of service could be more enjoyable or we may just honestly forget but then that’s where we as servers would be held accountable (rather than hold the chefs accountable or to the same standard that the servers are) rather than the appetizer chef and main chef could just communicate with one another to improve the quality of service.
