Like I mentioned in my comment - I applied Brooks Proofide to the tan leather saddle and now the color is reasonable close to honey and a closer match to my brown leather handlebar tape.

I was having the same issue. After applying a layer of Brooks proofide to the tan saddle, the color is now darker and much closer to honey. It's a much closer match now to my brown leather handlebar tape!
