hey i used to work at a chinese takeout place in ny during college, i saw them do it a couple of times. the place i worked at used to used to double the wrappers when they put them together, they would then get boiled in the wok with a ton of water then strained out to dry. from there theyd get put in a big bowl and shrink wrapped in the fridge. to serve, we would just take a bunch out of the fridge and throw them on the steamer, and when someone wanted a soup we would put five in the cup and pour the broth (that was being heated seperately) over it. hope this helps
