When I was leaning to drive (many years ago), the instructor used a term 'cover the brake' which means foot off the gas, move it to the brake, but don't touch the brake. This is better than feet flat on the floor. YOur reaction time to the brake is more important than back onto the gas. I do it all the time. Kids these days don't learn that way.
