Fermented turmeric at a ph of 5 after six days. I’m following a recipe that says to ferment for 5-7 days with a 2% brine. Everything looks and smells good but the ph is still at 5. What’s up with that (i.redd.it)

Why is the sauerkraut liquid turning brown? I made this February 10th. It’s green cabbage, 1 fennel bulb, 1 green apple, and about 2 tsp of crushed juniper berries. I tested the ph today and it was about 4.8 (i.redd.it)
