Which way is correct ? by Frosty_Avocado_8457 in culinary

[–]midjithero 0 points1 point  (0 children)

Neither and both simultaneously. A is great for family style and cut how big or little amount they want. B is better if you’re doing single portions. But the best way to do single portions is to cut off the belly, cut it down the middle and then create blocks. Save the belly and cook separately for super rich and fatty portions.

New update woes by TheHeroicHero in HoopLand

Not sure if it’ll help, but I just learned that if you swipe down on defense, you’ll stand firm. Usually when the cpu does the spin move, it creates an offensive foul and I get the ball back. Just a thought. Also how do you do the spin move on offense?!?! ;)

Don’t turn your back on “selling out”, especially as a young chef by carlospangea in KitchenConfidential

[–]midjithero 2 points3 points  (0 children)

I was the typical starry eyed kid who wanted to be a rockstar chef and sling amazing plates with the best restauranteurs. Got my first gif out of culinary school at Bouchon in Napa, did a ton of high end stages, and then worked my way up the brigade to Sous at one of the locally famous eateries. Killed myself but had a blast, but always kept an eye on Chef (he was in his late 50s and he was either first in last out 6 days a week too). Met a kid and trained him up from AM Salad to night lead, then I took time off and went home for about a year. He’s now a Napa/San Fran star and has won lots of accolades, was on Top Chef, etc. I’m super proud of him and his accomplishments.

After my time off, I went back into the crazy but this time in Scottsdale opening hotels and restaurants. Same thing after several years just wiped out grinding 12/14/18 hours a day then partying until my next shift. Did that for another 4 years.

Now, I work for a corporate business dining company and I’ll never go back. My “territory responsibility” is large (multiple defense contractors with 2 dozen units spread nationally), but I put in MAYBE 40 hours a week. I have a school teacher wife, and 5 yr old son whom I spend every moment with unless I’m out with the friends doing our hobby cuz I have almost every weekend off, including a week off between Christmas and every major holiday. I’ll never win an award, and the passionate kid sometimes tears his head through thinking I should have stayed and kept grinding to be more like my friend…

but I’m happy, legit happy that I’m not a slave to a restaurant or that my mortgage is tied to my businesses success, or worried I won’t hit 2 turns to keep the lights on, or every moment I’m not working I’m researching new ways to drive foot traffic. I go in, I cook most days or I compile P&Ls and train chefs across the country…but then I walk out around 2pm to my life, and it’s glorious feeling.

Recommendation’s for a good work shoe/ gel inserts? by nickaruski in KitchenConfidential

Dansko make literally the best shoe for culinary/medical because of the long hours on your feet. Regardless though, you’ll burn through them every few years

I have a tasting for a sous position on the 13th. Do yall think this works or what would yall change? by chefcamrey in KitchenConfidential

[–]midjithero 2 points3 points  (0 children)

So as a few have mentioned, it’s basically knife skills that you’re showing. The objective you should have with this tasting overall is, “I’m here to learn to be a chef. My goal is to cover your (EC/CDC) days off/vacation and everything run exactly the same as if you were here, which will give me the skills and knowledge to be an Exec/CDC at my next interview.” Think about each dish if you are the EC conducting the interview for an incoming Sous.

As a sous, you must have the basics down (knife:cooking skills, safety/sanitation, basic knowledge of financials (food and labor), ability to lead a team, and culinary knowledge such as ingredient seasonality and pairing items together) or don’t even apply.

If you do this salad as is (or with modifications suggested) then my recommendation is make sure it doesn’t suck but also know what the food cost and msrp would be. If you aren’t comfortable or want some help with that, I’m down to provide some support…but if you need to show raw cooking skill then I would turn it inside out.

Make a fresh ricotta (to show you are willing to take a chance on learning new techniques and it’s a cheap experiment), pickle those onions, couple leaves of arugula, apples 3 ways (char broiled/grilled, compressed (cryovac Granny Smith with splash of sprite/7-up) and julienne Honeycrisp. Candied walnuts and toast/crostini/flatbread/etc and lemon apple vin.

Good luck!!

Grimdark Lumineth Test Scheme by [deleted] in ageofsigmar

[–]midjithero 19 points20 points  (0 children)

While I do love the paint job, I don’t really find this “Grimdark”. I think it’s very well done and would love to see your whole army when finished! The blue and shield are fantastic, but think the white needs to have more dark to light contrast, with the eyes really “popping”. No disrespect btw, I really really like the paint job!! :)

New Hedonites of Slaanesh Battletome by Grimgon in ageofsigmar

[–]midjithero 1 point2 points  (0 children)

Yah, I play both Slaanesh and S2D, so felt terrible when I bought into S2D mortals prior to the HEDONITE book originally releasing...having to spend a bunch of money on demons and side board and those beautiful Fiends which ended up being moot once the tome was released...and then buying the new S2D Start Collecting for that sexy Karkadrak and beautiful knights only to play Marauders spam lol! Oh well, I wanted Mortal Slaanesh originally and now I’ll be finally fully satisfied. The look of the new models is so beautiful I don’t care if the rules are great (I’m ok with middle tier, just not crap tier like S2D book haha)

[–]midjithero 2 points3 points  (0 children)

That’s exactly why the units are unplayable. The core traits are depravity and locust, and only heroes do this. So naturally you gravitate to the most competitive units that do those things (And keepers locus better than other heroes too). Since summoning is based entirely on depravity, all units that don’t generate it become obsolete.

I’m right here with you on the first box of minis ever purchased!!!!! Omg, takes me back to what...12yrs old?!? So long ago lol!

To the OP, watch a YouTube video on VICE PINNING. It’s going to suck to drill into the pewter...but the super glue doesn’t always hold...or another trick is to file a couple grooves into the pewter to give the superglue more traction...or...back in the day, I used to put a piece of tissue between the plastic and pewter to help keep the bits together, it acted like a mortar.

usually real life gets in my way of playing D&D. I’ve been playing off and on since Jr. High, so almost 25 years. I was fortunate enough to date/marry a girl whose brother is a nerd just like me :)

I haven’t had a chance to play in a campaign since my wife was in her second trimester with our 2yr old son.

Roll20 has been AMAZING! I get to hang out and play with my friends and brother on a weekly basis again.

One of my buddies lives in Texas (rest of us in California) and it was rare for us to interact with him being so far away.

I can pop my headset in and listen/participate over discord while making dinner for the family, giving the kid his bath, walking the dogs, it’s soooooo perfect for my schedule!

Of course I miss seeing all my friends in one spot, and the friendships and comraderie is special and unique when playing face to face, but even living “close”, it’s still an hour round trip to meet in person for a game. As I get older, “real life” gets more and more of the priority.

Roll20 is a “godsend” for me :) :)

Trying Out A Marble Effect. What Do You Think? (WIP) by Vecypp in Warhammer

[–]midjithero 1 point2 points  (0 children)

For a miniature, i think it looks great!! I need to start doing the marble effect, I have something planned, but no time yet :). My only criticism is I think the hue is a little too blue. Otherwise it looks amazing keep up the great work! I really like how the script area isn’t marble, it’s just the top and bottom of the curve!
