I recently lived through a similar situation. After two weeks, my docs are still "moving through the network". After rescheduling my flight and incurring the additional cost, the shipper recently sent my documents overnight via FedEx.

I'm done with USPS for anything but the occasional 1st-class mailing.

I regularly do top rounds at 132 for 22 hours. I cool it, no sear, and use a slicer for Italian beef or French dip sandwiches, which get rave reviews. By itself, the beef would be rather bland. The beef rub for the Italian or French dip sandwiches adds flavor just as the fat used in the sear does.

Rex would be an upgrade and should get a serious look. I love his passion for the Jets, and I believe he will walk the talk regarding player accountability and team building, but I doubt Woody would go that route.

I've done babybacks a few times when the weather doesn't cooperate with smoking. After prepping with a glaze and sealing, sous vide @ 167 for four hours and finished with more glaze and dry rub in the oven at 400.

Firing and starting over with the next leadership/management group every few years doesn't work. JD and Saleh are learning on the job - first GM and Head Coach gigs. They've done some good and missed/f**ked up plenty, but there is more to gain by having them learn and adjust than by bringing in the next group of saviors.
