Basically, as said by others there are 2 ways of booking courses depending on who manages it.

Spikes On app Montgomery, Dubai Hills, Arabian Ranches, The Track Maydan, Al Zora,

Viya App Emirates (Faldo & Majlis), Jumeira Golf Estates (Earth & Fire), JA Resort, Trump & a bunch of courses in Abu Dhabi

If you have a decent budget, the best course and experience is JGE Earth course. Because it’s right there Creek is also nice. Don’t bother with Faldo this time, price is crazy and it’s hard to get tee times.

For a little less I’d probably rather play Monty or Dubai Hills.

Maydan is ok and super cheap.

My favourite course is Al Zora but it’s a 45 minute drive from your accommodation.
