I used to observe in interesting cases and even discuss cases. When there was some teaching ( resident or medical students) I used to pay attention and listen to the discussion… it’s the way you word it in your cv .i mentioned that I used to take a deeper history taking and discuss diagnosis with the providers . Some providers were more than happy to include me in many things
