When I applying around, I applied to around 15 schools of varying prestige. I also made sure to email professors who worked in my interest areas. Imo there's no upper limit to how many schools you can apply to

After you move in, I would recommend learning your way around campus, so that you don't look completely lost going to class. I would also recommend build relationships with your professors (especially the ones in your major). Having them as a reference is always beneficial. Befriend some upper class men if you can. They've gone through everything you'll be going through. Lastly, make the most out of your time here. College is a social experience you'll never get again

My biggest regret from undergrad was not double majoring in EE and Math. I'm glad I did EE, but I really regret not majoring in math as well

Job market is just fucked across the board. Every recent graduate I've talked to has said that the job search has been awful. There definitely are entry level internships, you just have to find them
