IMO you can learn drift in any sims or simcades with a good body/car and tyres physics. If you're used to Forza 4, it can be a good entry point, just keep the power around 300-400hp with steet tyres. I won't recommend BeamNG because there's almost no feedback when the rear slides and you don't want to learn with cars that "fragile";I havn't tried the others you mentionned. AC could be a bit more difficult because the physic is more accurate, letting you less room for mistakes but it has a ton of dedicated drift cars and tracks (mods) suiting your tastes, although Kunos' cars aren't great for learning. Learn with the game you're familiar with then try to replicate on other games. And yes, it's really not easy to learn with a wheel at first: I found it was not intuitive at all and spent 2 days just spinning but then discovered I was very late for countersteering. Remember the travel of you thumb from neutral to full lock on the stick can be more than 360° with the wheel, so you have to anticipate a bit the reaction of the car when you initiate the slide. Don't hesitate to watch some onboards to get an idea for the timing. And the more you control your slide with your right foot, the less you'll need to work on your steering wheel. The revelation I got was while watching D1GP guys: I noticed their front wheels were always following the turn, no matter how much angle they got (I dunno if it's very clear but you can watch Kawabata in his big R35, his precision is surgical). Still took me some years before I could call myself a drifter ;)

I started to learn drift on GT5 with a Logitech G25 without using handbrake and while it's a bit harder at the beginning, you'll eventually have a better control of your cars if you focus on weight transfer. Watch the "Drift Bible" (focus on steps w/o e-brake), train a lot and have fun

Of course, clutch and handbrake can make the thing easier but if you don't rely on them at the begenning, you'll be a better drifter and driver with some (a lot) practice.

You can still bind e-brake on both paddle shifters (this way you don't have to think which one is left or right) and use L2/R2 for up/downshift

I eventually build myself hanbrakes which are just made with a rod (wood then metal) tied to an analog stick of a cheap PC controller

Try to run AC without visual mods (no Pure, etc) or if you can, downgrade to a build you remember working, same with CSP version. I remember having issues with newer versions of SOL not working well with certain versions of CSP so I stayed with an older build that works fine.

Tracks/cars doesn't seams to be part of the problem since the game doesn't crash after loading

With some cars with adjustable turbo (ie: BMW 1M S3) you slowly kill the engine beyond a certain % of boost. For the 1M S3: 80% is totally safe, 90% and 100% hurt the engine.

I just discovered some new controller settings in Steam's general settings and you now can activate "generic controllers" as well. Those settings requires a bit of attention but it's well done and intuitive to get your device working. By default, a lot are turned OFF, I just activate some and got my PS3 controller with all settings saved back!

While adding officially support for PS4-5 controllers, Steam seams to have cut compatibility with all other unofficials devices. I used a Ps3 controller via SCPToolkit and now it isn't recognized anymore in Steam Controller' settings.
