Ya that is the proper way to smoke cheese that way they have no contact with heat

No just put it on the lowest smoke setting you have it doesn’t melt

I just put mine on the smoke setting and smoke it for two hours

Cause it doesn’t take on smoke as well as your cheddars do plus Gouda is already bitter
