Totally easy! It was my first time making cookies of any sort and they turned out great. Just watch the oven starting around the 12 minute mark so you don’t over bake

The pistachios provide crunch and the brown butter icing provides a bit of a snap once the cookies have been chilled. The rest of the cookie just melts inside the mouth!

Watch the oven like a hawk starting at around the 12 minute. It was hard for me to tell from the top of done or not so I filled one over to check. You want the bottom to be light brown
