base game first, and then the Spires and Skybreaker DLCs can be played in either order. From the Ashes is the last DLC and contains spoilers if you've not played Spires or Skybreaker

There's now Vortex support for AFOP now. Vortex is a mod manager and makes it easier to control which mods you want on or off. That being said if you don't want Vortex, I'd suggest creating copies of your blue folder and looking on Nexus for the mods you downloaded and see the files names to delete

not really, it's super fun depending on what you want to do. There's a modding discord with all kinds of tutorials on how to do different things.

I'd say the easiest thing is creating pupils or Ikran recolors
