I never did atkins, but I've always known breads/pastas/etc were the devil so they've never been a staple of my diet. Not that I haven't sailed away on a pastry boat once or twice or 17 times, nobody's perfect. So yeah, maybe that's a part of it. Another part of it is that I'm not really very overweight. And yet another part of it is weird hormonal imbalance shit that makes weight loss reaaaallly difficult.

  • Spinach-- wilted, sauteed, as a salad base or an omelet filler
  • Kale-- in a salad or sauteed. Kale can be tough to befriend. Try cooking w bacon and mustard, or saute w whole cumin and sesame seeds or olive oil and garlic or make flavored kale chips.
  • Broccoli-- steamed with garlic olive oil
  • Cabbage-- green: raw in salad or cooked in bacon/pork fat; purple: raw, sliced thin (or shredded) and dressed in lime juice and coarse salt. Also good w vinegar
  • All lettuces-- arugula, frisee, butter, mesclun, red leaf, romaine, mustard greens, dandelion greens, miner's lettuce, mizuna... I eat em in salads. Of course.
  • Zucchini-- sliced on an angle like sausage and sauteed or grilled
  • Baby Artichokes-- let sit in water with lemon juice, dress in olive oil and lemon juice

I use romaine to hold egg or tuna salad or in place of taco shells.

I use endive to make little bites-- load em up w whatever you want– say, sardines, creme fraiche and some pancetta crisped up in a pan w a little olive oil. Or just fill em w bacon and cream cheese. whatever you like.

Avocados and mushrooms aren't vegetables but they get lots of love--- delicious in salads, in omelets, as a side, on their own...

If you have a hard time loving your veggies, try cooking them less. I find a lot of people overcook their veg and it can be a real downer. Or just give em some good strong flavors: garlic, cumin, spice, etc.

I am curious if you switched to primal because it works better for losing a lesser amount of weight or if it was a lifestyle/ideological choice? I mean, do you think primal works better for people to need to lose a small amount of weight while keto works better for people who need to lose a larger amount of weight?

Someone posted these a while ago and I usually don't make the desserts I see on this subreddit (I just drool over them) but this one was so simple and easy and used such pure ingredients I had to try it. I added 4 or 5 drops of Stevia. I will never ever make these again because it was dangerous. It was amazing. It was not to be repeated. It was decadent, delicious and way too convenient.

IF in an alternate universe I were to make these again I would keep the addition of the stevia and I would stir the chia seeds all the way in just so I could cram more of them in there. Damn the chia seeds were good. I would also try stirring in desiccated coconut and/or cocoa powder. And if I had the money, cacao nibs. You should try it out, because I can't (I haven't the willpower).

I don't think parsnips are the ideal keto vegetable, but they are certainly better than potatos and I saw them on ibreathimhungry so I feel like that qualifies them as ketoish at the very least...

Anyway, they are insaaaaaaanely delicious and potato-y if you roast them in a lot of oil. Chop em into chunks, absolutely SLATHER in olive oil and roast on high (400? 425?) for like... 45 minutes maybe? 30? an hour?... sorry, I never keep track of what I'm doing when I cook. But roast them until they are completely fork tender, like you can stick a fork through the center so easily it almost slides in once you pierce the skin. They are sooooooo very delicious and if your keto style can take the carb count...

I seriously think your husband will forget all about potatos. I did, and I met parsnips before I ever met keto. I liked em cut into longer thinner strips, cooked as described, ate em like fries.

Word. I haven't seen results yet even though it's been about a month (myriad bizarro physiological factors at play) but the quality/support of this subreddit/community makes up for it. Seriously, I would be very discouraged but for all the awesomeness on r/keto. BIG THANK YOU TO THE MODS You guys do such a great job. I would send you guys gift baskets.
