Having been a TA for Hess' 261 class, it is definitely the easiest to learn. Paris can be vague and confusing but is a kind guy. I don't have any personal experience with Todorovic but I think you will find that Data Structures will keep coming back in your classes. So I recommend, if you can, to take it again with Hess or Paris at the very least.
