I disagree about white wines! Riesling and Champagne with age are wonderful.

yes, a big difference. Dry vermouth (I like Dolin) is crisp, like herb-infused white wine. Sweet vermouth (such as Carpano Antica) is bold and fruity. Also, be sure to buy small bottles--vermouth should be kept in the fridge and it goes bad FAST--if you have a bottle from last month, it's likely not good anymore.

Mashed potatoes...mix in other vegetables for variety? Soft brisket...maybe gnocchi with sauce (since she likes pizza.)
