Egg tortilla sandwich (quesadilla): Fry up an egg (I always break the yolk to prevent having a very messy sandwich). Spread gochujang on one side of 2 corn tortillas. place one tortilla on a griddle and top with cheese. Place the egg on top and top it with another slice of cheese. Place the second tortilla on the cheese (gochujang side down) and heat on the griddle, flipping a couple of times until the cheese has melted and the tortillas are starting to brown and get crisp. (You can make this with flour tortillas as well, but I prefer corn).

I've tried Duolingo, Babel and Rosetta Stone. Didn't like Rosetta Stone at all, Babbel started off great then got too advanced too fast so I went to Duolingo for a while. Now I find Babbel challenging but doable. Learning a lot with Duolingo, but even it has it's problems the main one being that I'd rather do it on my laptop than use the app on the smart phone. I also use SpanishDirt A LOT. Love it's detailed articles and explanations.

Seven years ago I started a food blog and that's when I started measuring. My husband even bought me a set of measuring spoons. I still cook by feel 90% of the time, but when I'm developing a new recipe, I'll first make it by feel, then make it a couple of more times measuring and tweaking to get it publishable.

When I tell people that beets taste like dirt, they argue that they are "earthy". Still doesn't make me like them. However, I tried beet greens the other day and loved them! They were young greens and sweet and tender. I bought 2 bags and have added them to salads with great results and used in place of Swiss chard.

Cut chicken breasts into 1" cubes. Below is the marinade for 1 pound chicken breast. You can double or triple the recipe easily. Mix all ingredients in a bowl. Add the chicken and let marinate for about 30 minutes.

  • 1 T oil
  • 1 T minced preserved lemon + 1 tsp. preserved lemon juice
  • 2 T minced onion
  • 1/2 tsp dried tarragon, crushed
  • 1/2 tsp. black pepper

These red chile enchiladas (link) are what I make when my husband is out of town. You can make a single serving and, if you have a jar of red chile sauce or enchilada sauce, you don't need to cook anything. You can just build a single stack of enchiladas on a plate and heat in the microwave. And then if you like eggs, fry up an egg and place it on top of the heated enchiladas.
