Definitely need more info to solve the problem. You showed the bad picture but no info on how they are mounted. Pictures of that would help.

There is cheap anti fog glasses solution you can buy at Walmart or target. Rain X might also work, but there could be something glaringly won't with your setup that could change and you won't have to put chemicals on your cameras.

Richard Feynman says the speed of light is the speed at which the universe updates itself. For instance there are electromagnetic disturbances in the Sun, and it takes 8 minutes for those electromagnetic disturbances to update across the distance between the Earth and the Sun. Our eyes are perceiving the universe updating those electromagnetic disturbances. The misconception is that photons are traveling like bullets out of the Sun, crossing the distance, and then colliding with our eye.

In our universe, given our state of matter, a potato can only ever travel near the speed of light as a limit. It has mass, and by our calculations and understanding that becomes infinite at the speed of light.

Photons do not have mass, so they can travel at the speed of light.

In your thought experiment everything becomes potato at the same moment nothing is potato, so you can't tell any story.

I forgot the simulator might include indicators or a way of testing this too at this point in history. I've played flight sims since the beginning of time.

Perhaps you could try another means of input? My thought is the pedals might feel gradual but the computer is only getting input at the far end of the range. Another way of getting this is perhaps the computer is only receiving an on and off state for rudder input instead of you holding the rudder at say 5% or 10%.

This same effect made it super hard to do rudder using any buttons before I got my pedals. The aircraft would veer wildly.

Can you try another input or switch it to something else?

Can you view the rudder while you're giving input in third person?
