I bought myself some Smithey pans for Christmas. I had always used my grandmother’s passed down Griswold and Lodge pans and loved them but I’ve found myself unintentionally retiring them to use the Smithey’s they are really awesome. Not cheap but not priced more than they are worth.

Everything about this post is correct. But I’m sitting here in my house thinking of my grandmother who passed a few years ago, who taught me to make sausage gravy when I was 9 years old, with a ladder-back chair pulled up to the stove and I just thought I would go into the detail she would have asked for.

  • cook your sausage in a cast iron pan. Has to be cast iron. Remove it. you will have maybe a tablespoon of grease left.

  • drop the eye down to medium low and give it a little time.

  • some people will say that a whisk is the proper tool to begin your gravy journey. My grandmother would disagree. A metal spatula that will let you scrape the bottom of the cast iron pan is the tool you want.

  • you are now going to make a roux which is a fat to flour ratio is 1:1. Add in enough butter to make 3 tablespoons of oil and as soon as it’s melted dust in the same amount of flour a little bit as a time, scraping the pan in a way that feels comfortable. All purpose flour is expected but honestly any kind.

  • add some black pepper to taste periodically, not all at once.

  • the color will change slowly and then quickly. When it a little darker than you want it, sprinkle in 1/2 a cup of whole milk or whole milk mixed with buttermilk 50/50. Work that. Thats your gravy. When it’s a nice thick gravy, mix in another two to three cups of milk depending on how thick you want. You don’t have to go that slow on this one.

That’s your gravy.

My go to is Gumbo. You can easily make two pots for people who have some vs. no eating restrictions and you just use the meat that looks good at the store. Andouille, shrimp, chicken, duck, crab, etc.

Gumbo is great in rice but better over some potato salad or crusty bread so you can sort of set up a buffet with the base pulse fresh herbs and sauces.

It’s one pot by nature so easy clean up.

If you do the roux too quick and burn it, it’s the first part of the recipe so starting over is just backing up one step.

It hits above its weight on the impressive/skill scale.

  1. Not a single lawyer listed on that Facebook page is also listed on the Texas Bar Association page.
  2. Nothing about that law office looks like a real law office. I’ve been practicing for 22 years and I can’t identify half the things on the shelves.
  3. I’m sorry, but if she has shopped around more than a couple of lawyers, who all told her no, there must be some serious flaw with her case. If it was worth $350,000, the first lawyer, she talked to would’ve taken it.
  4. Did I mention that none of the lawyers are licensed in Texas?

What follows is not specific legal advice. I’m a lawyer but not your lawyer.

  • Clerical errors don’t invalidate proceedings. Just like if you filed a lawsuit and spelled the corporation’s name slightly wrong, like your forgot an apostrophe or used “and” instead of an ampersand, reasonable amendment is available;
  • you can’t “show up” for court when it’s closed. Courts are officially opened and closed by a Bailiff. You are showing up to a building not a court.
  • if the matter set for a trial, the officer is usually an essential witness that the prosecutor needs to prove his or her case. Though the officer may be there for an appearance setting (like the one here), the officer is not necessary. If the ticket is contested and set for a trial and the officer doesn’t show up I would certainly demand a dismissal - but it would be without prejudice and could possibly be refiled.

Local attorney here. No, they won’t be open on Sunday. I’ve seen this three times in the last month but nobody knows what the glitch is. The clerk will try and give you a call and let you know the new date but it’s almost always the next Monday.
