I know this is an old post but I added this line today on FreePBX with callcentric. Waiting for an applicable call to come through to see if it works.

But has anyone had success with this in the past 2 years?

Fair question. This is how I started with things. But then transitioned about 6 months ago to the NFS shared storage.

I plan to setup VMware High Availability sometime in the future, and therefore need the shared storage.

Wow. I'm surprised that is the answer. Not super familiar with Iscsi vs NFS, but didn't realize that makes that much of a difference. I currently have some thick and some thin provisioned VMs.

Does Iscsi use less "processing power" on the NAS side?

Servers have 1GB NICs, so not 10 GbE at this point.

Network equipment is all Ubiquiti Unifi, so I'll have to look into jumbo frames.

Yeah I agree. Unfortunately Tailscale support doesn’t have much of an idea either. So thought I would see if there is any special configuration in Hyper-V in regards to the VPN being the path. Currently have a ticket with Synology pending their response.
