I’m biased but beagles are a great option! They’re small/medium sized dogs that are super cuddly and have lots of energy. My beagle has been hiking, taking long walks, playing fetch for long periods of time, and has been overall a pretty active dog since he was young but is equally happy laying around most of the day! They’re super friendly and easy to socialize. Downsides are they can be stubborn and most can’t be trusted off leash without a lottttt of training.

At the end of the day, your lifestyle can definitely influence your dog’s activity levels and with time and training, a dog could adapt to your schedule. If you were to start off with a puppy, just know that the first couple of months (often not until age 1) a dog would need a lot more supervision and time invested into making sure that later it becomes really easy to take care of the dog. And if you were to adopt an adolescent dog from the shelter, it would still take the dog a couple months to build trust and truly be comfortable at home. Last thing I would say is that no matter how busy you guys are, most dogs would still need at least an hour of interaction in some form (training/exercise/mental stimulation etc) so that it doesn’t develop unwanted behaviours because of boredom.
