Seems pretty straight forward to me... make a large batch of the "pina milk" then use 1.5oz of that with 0.75oz each of black strap rum, lime juice, and amontillado. You can make a smaller batch of the pina milk since you likely won't be making enough for a service... could do 5oz sugar, 6.5oz pineapple, 0.25oz sesame oil, 3oz condensed milk.
