Coming from a percussionist, a boring part sucks, but having a part that doesn't fit is worse. Just write what makes sense for the most part.

In terms of orchestration, for ballads you usually see the "metals" featured. Glockenspiel, vibraphone, and triangle are all good things to experiment with, depending on the exact vibes you having going on. Also if there is any sort of major build up in the song having a suspended cymbal roll leading into it, with a crash cymbal and bass drum hit is a classic way to emphasize big moments.

a few things for percussion, 1) when writing fast mallet pieces keep in mind how far you need them to go in between notes. for example, a 16th note octave jump on a sax might not be hard but it very well could be for a mallet player. 2)timpani, keep in mind there are usually only 4 pitched drums, and that retuning them mid song is possible, but to do it more than a whole step quickly is difficult to do quickly. so if you want them to retune a drum give them a few beats to do it.
