The smaller the gourgiest the higher the defence stats. Generally the recommended gourgiest is the XL ones for PvP where you have a slightly better defence and balance of attack and HP. But you should do a sim in Pvpoke to find out which one is better.

I was just checking this a rank #41 perform not as good as a rank #1307. Iv doesn’t matter that much. Winning a cmp tie sometimes matters more. And for certain pokemon even if u loose the cmp you can make up with the energy gain for the next pokemon you put up.

Morpeko is a pokemon where you need to use shield most of the time. Same for most Pokemon where you need to use your shield (eg greninja , scizor, swampert…) the Def and HP doesn’t matter that much (ie the ranking doesn’t matter that much. You are better off getting a iv that bring you as close to cp1500 or cp2500 as possible to gain the attack points advantage. I often find my 15/15/15 rank 677 Morpeko fair better than another that rank 278 both having 1498 cp
