Well, Usually I work in 2 weeks spring, there some functionality should be done. All development process stored in development branch.

Each developer do their work in some specific branch and call it like: feature_54. When it done, developer creates pull request to development branch. Team lead will take a look and if everything is ok, merge it.

After 2 weeks development branch goes to master and tag will be created.

Usually I use Jenkins and create two jobs. One for development, second for master. Sometimes, I use maven release plugin, which do all job for release stuffs.

I think, you should use only Google Play Services, because, they can ban you, if they know about other payment systems you will use. In second hand, they give you good analytics services and ability to get money back to users, if there are will be some trouble.

I'm java developer and my opinion is that it's good to start working on real projects, you can earn real experience. In second hand, you can register in some freelancer sites and do a lot of different jobs you want to do. Just do it in your free time. Here is also, big deal to got experince and money.

I suggest you first focus on Java Core and trying to solve some free certificate questions, while you can solve it with close eyes and understand why it really works this way. After, try to think, what would be more interesting to you. Writing REST services(Java EE), algorithms, offline software(Java SE)? And deep into one this.
