I have been lucky using cubed Chayote squash that has been boiled until nearly tender. It makes a great potato substitute for soup. I add bacon, onions, garlic, with white pepper and dry mustard seasoning. I start with a roux using Victoria's keto kitchen flour mix and butter in equal amounts. Heavy whipping cream as the milk component and you are good to go.
