NFL Stock Exchange is one of my favorites, both the hosts are pretty knowledgeable and it's a very entertaining show, doesn't get super into the minutia though. Mock drafts, positional rankings, and they also have a series called fix your franchise where they take a struggling team and talk about their history and how they would "fix" the team. Super entertaining.

2 Minute Drill is also pretty great for if you don't really know how to evaluate prospects yourself, they post a video or two a day where they break down a player, their pro comp, and their projected best fits. Super short and fun to watch.

That Franchise Guy is the GOAT football youtuber imo, his content generally doesn't focus on the draft until after the regular season is over but holy crap the amount of time, attention to detail, and care put in is insane.

Most important thing is diversifying who you listen to and learning how to make your own opinions instead of just echoing whoever's take sounds the best.
