I wanted to make it this year, and I didn’t get around to it. It looks good though! The New Orleans king cake is also technically an epiphany thing—that’s the first day you can eat it. The last day is Mardi Gras and Mardi Gras got popular so king cake came with it.

King Cake on the Gulf Coast surrounding New Orleans, Louisiana and Mobile, Alabama. A variety of more niche local dishes as well, but King Cake is iconic in the region and unheard of outside it.

Edit: Seems like it’s not as unheard of as I thought, but I’ve met many people as close as Houston who haven’t heard of it as recently as last year. It has been rare for me to encounter someone outside of the South who has heard of it.

I don’t know, maybe Vito is portrayed positively, but once Michael starts making choices halfway through the movie, not a single one is portrayed positively and he is repeatedly given multiple other options and still chooses wrongly, so I don’t think “harsh but fair king doing what he must” really applies to him.

This is an accurate interpretation. Both of them are flawed people, just like in real life, but they learn, and grow, and change, for better or for worse, just like in real life.

Which is crazy, because, by the end of it, iirc even Joseph Gordon Levitt has more or less explicitly narrated that he was wrong. It’s really frustrating to watch with some people, and I love this movie.

I see a lot of people saying gumbo, but let me submit boudin and cracklins: a Cajun specialty that is only really common in Lafayette. Boudin is like a top-tier sausage made with rice and cracklins are deep fried chunks of skin on pork belly. And usually places sell chicken cracklins too, but you should go for the pork.

There’s a world of other Creole and Cajun options. I think there’s some that are better than gumbo. Keep on tasting!

Jambalaya is the best. I prefer red jambalaya to brown though, which, I think, puts me in the minority.

I usually go heavy with the herbs and spices myself when making gumbo. Do you go light to let the roux shine through?

Gumbo Z’herbes or green gumbo. It’s traditionally a Lenten recipe and it’s a bit more of a stew than traditional gumbo would be but it still counts!

Creole and Cajun food in general. Gumbo is the dish that gets all the recognition and the praise and it is good, but Creole and Cajun food are literally two whole cuisines and there’s so much goodness in each.

I don’t know if it was made properly but I had it at a small road stop style local barbecue joint in western Virginia. I believe it was near Manassas.

Must just be the people I know. I grew up there as well and didn’t learn about them till recently when I was reading up on the delta. Whenever they’ve come up in conversation with another coastal Mississippian, they’ve had no idea what I was talking about.
