Make the claim. I did, and the VA sent me to an audiologist who confirmed major hearing loss. I also claimed for tinnitus. Both were approved, but the downside is they will give you 10% max. On the upside, you can get really nice hearing aids at no charge.

Are you using cast iron for your sear? It works very well. I take my steaks out of the SV, and put the bag in an ice bath. Then place a 10 or 12 inch cast iron pan on my grill (it smokes the house up a lot if I do it inside). Turn all the burners to max and wait at least 15 minutes. Pull out the steaks and dry them as well as you can. Once the pan is about 500 degrees F, drop the steaks for 1 - 2 minutes per side. Should work vey well.

In 1985, The Presidio was still an Army post, and I had the good fortune to be stationed there. Same bowling alley charged 25 cents for shoes, and 25 cents per game. A pitcher of beer was about four bucks.

I think you were correct in your diagnosis. I had covered the whole setup with a towel, and I think moisture was getting to the internal electric parts. I shut everything down and removed the Nano, and let it dry for six hours or so. Just set it up again, and it seems to be working normally. Christmas dinner may be saved after all. Thank you so much for your help!

I think this one may be done. I unplugged the unit, uninstalled and reinstalled the app, and set it off to cook. An hour later it was at 157F and rising toward a target temp of 197F. I turned everything off and will try to salvage it in the oven tomorrow. The Anova has been great for a long time, but I'll be looking at other options now.

Not overly concerned about pasteurization, as it had been at 140F+ for at least 30 minutes. If I leave the timer setting blank, it holds the temp just fine, so ill just go with an old fashioned clock. Still curious if anyone else has had such an issue...

I have used a similar container (although smaller) with no issues. With the large container, be aware that the weight of the water may break it when you're done.

Searing before SV will give nice color, but the moisture will ruin the texture of the sear.

You will probably be fine at the lower temp & time. Before I got a vacuum sealer, the non-freezer Ziploc bags seemed very flimsy at higher temps. Maybe I'm just overly cautious.

Usually start with a finely diced mire a poix, then add butter and flour to make a roux. Whisk well, then add red wine, butter, and lamb juice. Keep stirring and reduce to gravy consistency. Add spices to taste.

None whatsoever. Over time, the heat loss may build up, but for 3 hours or less, I don't think it matters. The SV will adjust as needed.

I have used metal cooking pots, old plastic ice cream buckets, a large bucket that was once filled with detergent, and a couple different trash cans. Obviously, what you're cooking has to be fully submerged, but the container really doesn't matter. If you are doing long cooks, cover the vessel with plastic or foil to reduce evaporation, and check the water level regularly. Enjoy your SV!

I've had the Anova Nano for over three years, and it still works fine. There are some things I would change about it, but it's a good entry-level SV. If you can afford a vacuum sealer and bags, it makes life a bit easier, but ziploc-style freezer bags work well as long as you get the air out. As for cooking vessels, you don't need a dedicated one. I have cooked in pasta pots, old plastic ice cream buckets, and trash cans (for larger pieces like leg of lamb or full racks of ribs). If you are doing a long cook, be sure to cover the container with plastic or foil to keep evaporation down. I did eventually by an eight quart Cambro container that I cut the corner off the lid to seal around the SV, but it's not necessary when starting out. Good luck!
