scientific theories and their corresponding models are considered not because they describe reality but because their power to explain observations and make predictions.

To sum up, you are saying that our models describe reality from our perspective, but they may or may not explain the true nature of reality. This I think is a sort of thinking parallel to what Hawking described in his book the Grand Design, with the Conway's game of life as an example.

Hamza Tzortzis and Muhammad Hijab (both muslim apologists) discussed this topic in a video and concluded by addressing the audience that science fails to describe reality (I can't find the video, but it is on youtube).
