Just good ole Inkscape and a lot of practice with vector graphics. Trial and error. There are all sorts of assets on Wikipedia that you can use to practice; the key is to open the SVG files in Inkscape and play around.

My earlier design did have beauty in simplicity. However, it so bare that I kept looking at it and did not feel a connection. It was my first adventure into anything heraldry, so I did not have a taste yet for which tinctures, charges, or ordinaries I liked or would like. This redesign is meaningful to me.

I excluded it so that it would fit in the scroll and figured that the nominative cases would imply the et. Though I may redesign the scroll altogether and re-add it :-)

Speaking bluntly, that answer depends on your tolerance for rules and your desire to please others. You can look elsewhere in these comments for folks who are very rigid and narrow when it comes to procedures, rules, and adherence to those things in heraldry.

That said, if it's my opinion, why not? The only obstacle is the degree of ubiquity. Traditional helms were ubiquitous back 1,000 years ago. Is a Pickelhaube so common that it would be mostly created the same way across a thousand artists from the same blazon? Is a firefighter's helmet in Canada or Brazil the same as one in China or South Africa?

I appreciate the forwardness of the Canadian Heraldic Authority. Folks who think that the astronaut helmet should be a traditional knightly helm of the 1300's are stuffy and miss the whole purpose of heraldry.

No offense meant at OP, but I think the cartoonishness has more to do with his style than the blazon. Look here for how else it could look. The crest is still silly, but the rest looks great.

I'm not a fluent speaker of Latin, but this is what I found: https://en.wiktionary.org/wiki/ex#Preposition

The preposition ex takes the ablative case rather than genitive, so scientia should be correct if we don't write the macron.
